    • 1 (14.5 oz) can diced tomatoes
    • 4 cups (960ml) beef broth
    • 1 (15 oz) can kidney beans, drained and rinsed (optional)
    • 1 teaspoon dried oregano
    • ½ teaspoon smoked paprika
    • ½ teaspoon ground cumin
    • ½ teaspoon black pepper
    • Salt to taste
    • 1 tablespoon olive oil (if needed)
  • For Serving:
    • Fresh parsley, chopped
    • Grated Parmesan cheese
    • Red pepper flakes (optional)

Instructions

  • Brown the Beef:
    • In a large pot over medium heat, cook the ground beef until browned, breaking it apart as it cooks. Drain excess fat if needed.
  • Sauté Aromatics:
    • Add diced onion and garlic. Cook for 2–3 minutes until fragrant.
  • Add Vegetables & Spices:
    • Stir in cabbage, carrots, oregano, paprika, cumin, and black pepper. Cook for another 5 minutes, stirring occasionally.
  • Simmer the Soup:
    • Pour in diced tomatoes and beef broth. Stir well and bring to a simmer.
    • Cover and let cook for 20–25 minutes until cabbage and carrots are tender.
    • Add kidney beans if using and let simmer for another 5 minutes.
  • Taste & Serve:
    • Adjust seasoning with salt if needed.
    • Serve hot with chopped parsley, grated Parmesan, and red pepper flakes for extra heat.
