- 1 lb (450g) ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced (red or green)
- 1 (14.5 oz) can fire-roasted diced tomatoes
- 1 (4 oz) can chipotle peppers in adobo sauce, chopped
- 4 cups (960ml) beef broth
- 1 (15 oz) can black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 teaspoon ground cumin
- ½ teaspoon smoked paprika
- ½ teaspoon chili powder
- Salt and pepper to taste
- For Serving:
- Fresh cilantro, chopped
- Sour cream or Greek yogurt
- Shredded cheese (cheddar or Monterey Jack)
- Lime wedges
- Tortilla chips
Instructions
- Brown the Beef:
- In a large pot over medium heat, cook the ground beef until browned, breaking it apart as it cooks. Drain excess fat if needed.
- Sauté Aromatics & Spices:
- Add diced onion, garlic, and bell pepper. Cook until softened, about 3–5 minutes.
- Stir in chipotle peppers, cumin, smoked paprika, and chili powder. Cook for another minute until fragrant.
- Build the Soup Base:
- Pour in the fire-roasted tomatoes and beef broth. Stir to combine.
- Bring to a simmer and cook for 10 minutes.
- Add Beans & Corn:
- Stir in the black beans and corn. Let simmer for another 10 minutes.
- Taste and adjust seasoning with salt and pepper.
- Serve & Garnish:
- Ladle into bowls and top with cilantro, sour cream, shredded cheese, and a squeeze of lime.
- Serve with tortilla chips for added crunch.

- For extra heat, add more chipotle peppers or a dash of cayenne pepper.
