    • 1 teaspoon ground cumin
    • ½ teaspoon smoked paprika
    • ½ teaspoon chili powder
    • Salt and pepper to taste
  • For Serving:
    • Fresh cilantro, chopped
    • Sour cream or Greek yogurt
    • Shredded cheese (cheddar or Monterey Jack)
    • Lime wedges
    • Tortilla chips

Instructions

  • Brown the Beef:
    • In a large pot over medium heat, cook the ground beef until browned, breaking it apart as it cooks. Drain excess fat if needed.
  • Sauté Aromatics & Spices:
    • Add diced onion, garlic, and bell pepper. Cook until softened, about 3–5 minutes.
    • Stir in chipotle peppers, cumin, smoked paprika, and chili powder. Cook for another minute until fragrant.
  • Build the Soup Base:
    • Pour in the fire-roasted tomatoes and beef broth. Stir to combine.
    • Bring to a simmer and cook for 10 minutes.
  • Add Beans & Corn:
